This shortbread is inspired by a classic Fife recipe. We use icing sugar instead of caster sugar, which gives it a deliciously light flavour. They have a delicate sweetness and a freshness that only hand-making can bring.
Crisp and crunchy on the outside, light and fluffy on the inside, Bite-Sized Highlanders are delicious with a cup of tea or with fresh fruit and ice-cream. Sensational!
